And in keeping with reminscing our trip to Italy, here's a super simple and easy dish. Last spring, The Dutch and I had a private tour of a Prosciutto di Parma facility in Langhirano in the region of Emilia-Romagna in Italy.

Prosciutto or Parma ham are thinly sliced meat from pork's belly that's been cured and aged. It is savory and has a silky texture and the Parma area in Italy is the world capital of prosciutto.

This a quick and lazy lunch, admittedly, but it's the combinations of these tastes and flavors that make it score high in the amazing scale.

Just arrange prosciutto, sliced mozzarella, and arugula on a plate. Drizzle with good extra virgin olive oil. And you're off!
