California Mandarins in a Salad

I love this time of the year because so much of California's bounty is coming in season - especially oranges! We were in Sonoma a few weeks ago and oranges were literally dropping on the ground unpicked. What a pity!

Here's a simple salad inspired by Jamie Oliver. It's ridiculously easy to make for lunch but the flavors are brilliant, it's dinner party worthy, too.

You need:

Mozzarella balls

Extra virgin olive oil

Lemon juice

Madarins

Baby greens

Mint leaves

Prosciutto slices

To make

1. Make the dressing, which is simply 1 part lemon juice, 2 parts extra virgin olive oil.

2. Tear up the mozzarella balls, maybe half a ball per serving and lay them on each plate. Drizzle a little bit of olive oil.

3. In a salad bowl, toss your greens and mint with dressing.

4. Using your prosciutto slices, wrap a handful of the greens and set on top of your mozzarella.

5. Add the mandarin slices and drizzle with the rest of the lemon olive oil dressing.
