Low Carb Lunchbox: Tomato + Basil

When it considerably warms up in the spring (hello, Global Warming), I feel like I'm conned into thinking that it's actually already summer. So I start buying tomatoes and basil. Especially when I'm in a rush in the morning, this one's quick to make. Just toss tomatoes, basil and feta (parmesan is better), drizzle with olive oil. I try to bring a couple of soft boiled eggs and that's my protein.
